Blueberry Banana Muffins.


I have been loving my banana bread recipe that I had posted and wanted to try something new since I had bananas that were very ripe. I decided to make a super easy blueberry banana muffins.


  • 4 large ripe bananas
  • 1 box yellow cake mix
  • 2 large eggs
  • 1 cup of blueberries – I use frozen blueberries
  • 1 tablespoon of all purpose flour.


  1. Preheat oven to 400 and grease a cupcake pan.
  2. In a bowl, mash up the bananas.
  3. Mix in the eggs and cake mix.
  4. Coat your blueberries in the flour.
  5. Add the blueberries to the banana, egg and cake mixture.
  6. Scoop into the cupcake pan. I had to use 2 cupcake pans since I got 19 cupcakes out of this one.
  7. Bake for 15 to 18 minutes.

You can even replace the blueberries for chocolate chips or even walnuts if you wanted.



Blogmas day 8: Current favorite restaurant and my order.


My current favorite restaurant is Kopan Ramen. Funny thing is that I use to not like ramen at all, and I felt so bad because my husband loved it and I didn’t. Well one day we were out and about running errands and we found Kopan and I decided to give it another try and this was a few months ago and oh my goodness, the ramen there was so good. Needless to say I am now hooked and crave it a little way too much! 

I usually order a ramen bowl with mild sauce (I end up adding a little more spicy sauce when I get the ramen) and as far as the sides go I usually only order three things which are grated garlic, spinach and corn! I don’t get any protein or anything like that with my ramen. This has been my order since from day one we tried this place and I have never changed it!
